Canning Plans 2013
1. JAMS Only do small batches. The jam I made last year isn't being eaten fast enough. Only Connor and I eat it, and I'm trying to cut back on sugar.
2. ZUCCHINI RELISH Again, small batches... I'm the only one who eats it and I still have like 7 jars left.
3. TOMATO Make tomato jam instead of ketchup. The flavor is better and it's more versatile. It doesn't set like jam.
4. COWBOY CANDY Make some batches without seeds.
5. PRESSURE CANNING! Get brave enough to try it :)

Zucchini!
So far, I've pulled 16.34 lbs of zucchini out of my garden.
This was from this morning -
I saw these half and full bushel baskets at Tractor Supply Co. I had to get one. They remind me of the bushels of potatoes my great-grandpa Meyer always had in the garage. These have not been processed yet. The others have been shredded. I have about 16 cups in the freezer waiting to be made into bread, muffins, relish or whatever else.
Speaking of relish -
I made 4 half pints of Ball's zucchini relish. I kept out about a tablespoon and mixed it into tuna. Yummy! I will definitely be making more of this!

Jam Session and Chicken Update
I went to the local strawberry farm and bought two buckets and one quart of strawberries. Each one is approximately 4 quarts. I ended up not using the second bucket after finding a few really bad ones in there...
I made 5 pints of strawberry lemonade concentrate, 10 half pints of strawberry rhubarb jam, 6 half pints of blueberry rhubarb jam, 3 half pints of strawberry vanilla jam, and 2 half pints of rhubarb sauce.
Chicken Update:
It's hard to believe the new girls have only been here for a week. Last night was the first night that Sutton wasn't put in a cage to sleep in. The others kept pecking at her, knocking her off the roost, etc. I was afraid of her getting cornered in the coop and getting hurt. However, last night, she actually knocked Sprinkles (same age as her, but Sprinkles is bigger) off the perch and fought for her spot. She came out this morning chirping, yay!

Black Cherry Jelly!
A few weeks ago, I spotted 100% juice at the grocery store and thought "that might make a nice jelly". Then, my son and I came down with pretty bad colds and it got put off. I finally made it yesterday.
I bought Knudsen 100% Black Cherry juice and followed the directions for lower sugar (classic pectin) sweet cherry jelly on the Ball Site's pectin calculator. I made 4 half pints. It was quick and easy. The black cherry jelly tastes like crushed Bing cherries. I used it on toast this morning and in thumbprint cookies this afternoon. Yummy!
The cookies were made with a Betty Crocker Sugar Cookie mix I found in the pantry. They spread quite a bit more than I expected...
I did a few with marshmallows and chocolate chips, a few with caramel apple jam and then black cherry jelly with chocolate chips.

Canning
I saw 100% juice (tart cherry, blueberry and blueberry pomegranate) at the grocery store last week. I immediately thought they might make nice jelly. I did some research and yep, I can make jelly from them. I just need to get some no or low sugar pectin and I'm set. And hopefully it will "set". :)
I joined a canning group on Facebook. They talk an awful lot about pressure canning. I'm scared to death of pressure canning. I just picture it exploding in the kitchen. But the idea of pressure canned chicken, chili, and soups sounds so wonderful to have on hand... I think I need to master water bath canning first, then try pressure canning.

More Canning!
We went to the local apple orchard with my mother-in-law and niece last weekend. Connor and Kate had fun playing in the petting zoo and riding the Moo Train. It's a tractor pulled ride made from plastic barrels painted to look like cows. Connor loves anything train/tractor and had a blast.
We picked apples, which I don't think I've ever done before. Galas, Jonathan and Golden Delicious. Honey Crisps are technically done, but we found a few good ones on the ground. I picked 11 lbs of apples... It's amazing how good an apple tastes right off the tree. I love that they tell you to try them right there in the orchard. Connor ate at least two apples.
I made 4 1/2 12oz jars of caramel apple jam, 2 12oz jars of spiced applesauce and 2 12oz jars of sweetened applesauce. I still have 8 apples left. I'm probably going to make more sweetened applesauce. We plan on going back in October for the next round of apples. They have some kinds I've never heard of that will be ready then - Shizuka, Sundance, and others.
I think I'm hooked on canning. It's so rewarding to see the jars stacking up, knowing that I'm "putting up" for later on. We are considering buying three apple trees next spring. I'd like to get a few blackberry bushes too.

Peach Cobbler Jam
I guess I didn't realize that jellies and jams could be more than what's available in the stores. I made beautiful Peach Cobbler Jam last night with Red Haven peaches. Peeling the peaches makes a big mess, but it's worth it. I didn't finish till after 10:30 pm, so need to finish cleaning up this morning. This time, all the lids popped. It's just so pretty!

Canning Plans
I canned for the second time last night. Now, I do not have a canning pot. These two jars are pints and are now in the fridge... I realized that the pot was going to be too short too late. The water is supposed to cover the top at least an inch or so, it was maybe half an inch. I didn't want to take the risk and put them in the fridge after they cooled. The lids didn't pop, but the buttons were down. Oh well, I know it will get eaten!
Ball Fiesta Salsa
I went out today to get Red Haven peaches for jam, completely forgot the lemon juice. I'll pick it up on Thursday along with a half bushel of tomatoes for bbq sauce and more salsa. In half pint jars this time...
Next year, I'd like to have raised beds for a real garden. I want to do tomatoes, onions, bell peppers, various herbs, etc. I'd love to have a Red Haven peach tree, but the "dwarf" varieties are still 15 ft tall! I'd also love to have blackberry and blueberry bushes. Someday...
I sort of remember my grandmother canning. She only canned tomato juice for soup from what I remember. We used to mix it with milk and simmer it till heated. It was wonderful with salt and pepper.
I want to make peach jam, caramel apple jam, more salsa, bbq sauce and a few other things. No pickles! I don't like pickles. Although maybe homemade ones would change my mind.
